For this special collaboration, Arturo Granato, the chef director who has been leading Galvin La Chapelle since 2022, will be joined by Tom Brown, whose seafood-focused cooking has earned him widespread acclaim and a Michelin star at his restaurant at The Capital. Hosted by restaurateurs Chris and Jeff Galvin, the evening is designed as a meeting of two distinct culinary voices: Brown’s bold, ingredient-led creativity and Granato’s polished, Mediterranean-influenced elegance.
Guests will begin with a pair of inventive snacks that immediately showcase the chefs’ different styles. Brown brings richness and punch with lobster toast topped with lardo and crispy chilli oil, while Granato offers a more playful contrast in his duck liver parfait with spicy cherries and popcorn crumb. From there, Brown’s bream tartare with quail egg, soy and radish promises the kind of clean, precise flavour combinations for which he has become known.
Seafood remains centre stage in Brown’s crab custard with heritage tomatoes and wasabi, a dish expected to balance delicacy with bold flashes of heat and freshness. Granato then takes over for the main course with Welsh lamb, oyster, miso and stuffed morel, bringing together deep savoury flavours with his trademark refinement and balance.
